I made as big a pot of beans as would fit, because I can make a pot for about $2 (more or less, I would have to calculate weights and costs a bit more exactly to know for sure) and that makes between 6 and 8 dinner-sized servings. That makes serving costs of $0.33 to $0.25 per meal. Talk about stretching your grocery budget! I did this a few years back when I had obligations that prevented me from going on vacation with Mrs. the Poet. I fixed pots of beans and rice that lasted an entire week of dinners or lunches and managed to only spend about $20/week on food for the time she was gone. Most of that was for coffee and milk. I think that was the year I also experimented with a brown rice porridge that was a week of breakfasts for like $0.50 (so about $0.07/day before coffee). And yes, you might say I have more than a passing relationship with pinching a penny until Abe screams for mercy. I guess if push came to shove I could always change this blog to “How to live on pennies a day” by just putting up my daily diet and costs, but I don’t know how many people would read that.
